When we first see Haymitch, he is pretty much useless to both Katniss and Peeta, showing pretty much zero interest in helping the young tributes learn how to survive the games. Then, the very next morning he suddenly turns into a grumpy yet lovable mentor, filled with all sorts of helpful advice.
The change literally happens overnight, almost as if writers decided that his character needed to be toned down a bit after that intense first scene. Either that, or maybe Haymitch just needed a good night sleep and a hearty breakfast?
