Although at first glance a name like Huitlacoche has nothing wrong with it, its English name is the much less attractive “corn smut.” Corn smut is an edible fungus that grows on corn. It’s actually a delicacy in Mexico, known for its earthy, savory flavor.
Although we could understand getting behind that, its canned counterpart is not anywhere near as appealing. You might be willing to eat fungus, but you don’t want to eat it cold from a can. Nobody does.
