Elsewhere in the world, pancakes and waffles are a breakfast and maybe brunch time meal. Not true in New Orleans, which has its roots in southern African American culture. The soul food fare they prefer is heavy, hearty, and loaded down with gravy, fried chicken, and lots of butter!
